Nalli Nihari Recipe

Here is a signature recipe for Nalli Nihari Ghost from 3 spices restaurant at Double Tree By Hilton Pune. We relished this lip smacking dish during our recent staycation.

Serves: One
Cooking timing: 30 minutes

  • Nalli -220 gms
  • Green cardamom - 4 nos
  • Bay leaf- 3 nos
  • Star anise- 1 no
  • Cinnamon stick- 2 inch
  • Mace – 1 no
  • Ginger garlic paste- 20 gms
  • Turmeric powder 2 gms
  • Yellow chili powder- to taste
  • Coriander powder- 5 gms
  • Saffron water 5 ml
  • Garam Masala powder -3 gms
  • Cashew nut paste- 20 gm
  • Fried brown onion paste- 50 gms
  • Beaten thick yoghurt 30 gms
  • Lamb stock- 150 ml
  • Ghee – 3 tbsp
  • Coriander sprigs & Ginger julienne- for garnish
  • Salt to taste

  • Heat the oil in a thick bottom pan, add whole garam masala than add ginger garlic paste and sauté it.
  • Add mutton shanks and cook it for a while. Add one by one coriander powder, turmeric powder, yellow chili powder, garam Masala powder and partly add lamb stock in it.
  • Add cashew nut paste and brown onion paste, keep it on simmering mode until lamb gets tender.
  • Finish with beaten yoghurt and saffron water. Check for the seasoning.
  • Garnish with coriander sprigs and ginger julienne.
  • Serve hot with ajwain paranta or tawa chapatti.
