DIY: Homemade Pasta Sauce

The secret to a great pasta is a great sauce and making your own sauce rather than the ready made variety will add more flavour and nutrition to your pasta as you can choose the finest, freshest and organic ingredients. A proud feeling isn't it? Here is a easy DIY for making homemade pasta sauce.


Tomato Pasta Sauce:

Ingredients:

1 tablespoon cooking olive oil
2-3 cloves of crushed garlic
1 tablespoon tomato puree
800-1000 gms of chopped tomatoes
Salt and ground black pepper
1 teaspoon sugar
1/2 cup chopped basil
1/3 cup chopped parsley

Method:

1. Heat cooking olive oil in a heavy bottom pan.
2. Add garlic and saute till it turns fragrant and brown.
3. Add chopped tomatoes, tomato puree, mix well and reduce heat to low, cover and simmer until thickened.
4. Stir through the salt, pepper, sugar, basil and parsley, adjusting the seasoning as required.
5. Add fresh herbs like oregano if you desire & pour hot over pasta.

White Pasta Sauce:

50 gms butter
1 tablespoon refined flour
250 ml double cream
1 clove crushed garlic
150 gms freshly grated Parmesan cheese
4 tablespoons chopped parsley

Method:

1. Melt butter in a heavy bottom pan. Add 1 tablespoon refined flour & whisk well.
2. Add cream and simmer for 5 minutes.
3. Add garlic and cheese and whisk quickly.
4. Stir in parsley and serve.
