No Shortcuts To Happiness and Cooking a Perfect Dish

Whether one is cooking daily for loved ones or preparing community food for thousands, cooking can elevate the soul to great heights. I particularly love cooking for my family and basking in their compliments when I put up a perfect dish on the table. In fact, I love every step that’s involved- shopping for perfect ingredients, chopping the vegetables while humming my favorite song, the aromas wafting in my house and my family popping their impatient self’s in the kitchen every now and then asking “What’s Cooking, Good Looking? :)


Cooking is an art and for dishing out a perfect recipe you need perfect ingredients, cooking times and techniques, utensils, and measured amounts. Any shortcuts result in what is called a "bad taste" for folks who are eagerly awaiting soulful food. After all "Good food means good mood".

Whether you are a chef or a home cook, shortcuts have consequences on your business or on the happiness of people around you.

We love cooking biryani, a simple and yummylicious dish but one which requires patience as you endeavor to transform ordinary ingredients into an extraordinary dish with layers and layers filled with taste. But try and do Jugaad by reducing the time or putting all ingredients at once in a pressure cooker and you end up with mish-mash.

We begin by selecting the right rice and use only good quality basmati rice for the best flavor and appearance. Care needs to be taken not to overcook the rice. As far as the list of ingredients goes they may differ a little in each households but the basic spices like bay leaf, cumin seeds, pure ghee, cinnamon, cardamoms are staple. Even though the spices required are many, each and every spice contributes to the overall flavor and should not be excluded. The meat needs to be marinated in yogurt, garlic paste and little salt, for a good 8 hours and then cooked with the spices at perfect temperatures.



Finally we assemble the rice with the other ingredients in a Lagan (shallow thick-walled and concaved-bottom utensil) which is the perfect utensil for cooking biryani, seal the vessel with wheat dough and put on "dum" (put on a very low heat, so that all the flavors inside the pot amalgamate well) for at least 45 minutes. When done, we sprinkle finely chopped coriander and voila…. mouth watering biryani is ready!



As we said making a biryani is a lengthy process BUT totally worth it.

The right amounts of all ingredients are not only essentially to the taste but also for the required quantity to be served after a long wait. After all we don’t want our loved ones to be hungry for more.

This is very similar to selecting a trust worthy brand for financial investments which ensures your money is invested in different instruments and in perfect proportions to get you a great benefit in the long term. So #NoMoreShortCuts for happiness.

  3. I am also not a fan of mit-mash cooking, with reference to cooking this Jugaad attitude doesn't work. I keep telling that to my husband who only puts everything in the cooker - I will surely ask him to read this post. Thanks
