Eggplant With Sour Cream Recipe

The vibrant purple eggplant apart from being delicious has many health benefits. Time Required: Approximately 30 minutes

Ingredients
  • One big eggplant
  • 2 tbsp oil
  • 1 garlic clove finely minced
  • 1 tsp. Himalayan pink salt + extra for seasoning
  • 150 gm Sour Cream

Method:
  1. Wash the eggplant and cut the ends and the stem.
  2. Cut lengthwise and arrange on a plate. Sprinkle some Himalayan pink salt and keep aside for 15 minutes. Drain the water accumulated.
  3. Mix oil, minced garlic, little salt and brush the mixture on both sides of eggplant. Roast on a nonstick pan until lightly browned on both sides.
  4. Arrange on a plate and add sour cream 
  5. Garnish with seasonal greens of choice.
  6. Serve immediately
