Easy Wholewheat Pancakes Recipe With Cherry Sauce

We recently covered the many health benefits of this amazing sweet, tart and sour fruit- cherries. If that has given some inspiration, here is an easy recipe to enjoy cherries. Pancakes made with whole wheat are a great breakfast dish and fresh cherries add layers of flavors that tingle taste buds.



Here is the recipe:

Ingredients
For Cherry Sauce:
500 gms Cherries (seeds removed)
100 ml Cherry Juice
Sugar as per taste
1 tsp Cornflour

For Pancakes:
100 gms whole wheat flour
100 gms all purpose flour
1 tsp baking powder
1 egg
Sugar+ salt as per taste
1 1/2 cups warm milk
2 tsp melted butter

Method

To make cherry sauce, in a non stick pan add cherries, sugar and cherry juice and simmer on a low flame. Stir continuously till sugar dissolves. Add enough water to cornflour to make a thick paste and add to the pan. Add a pinch of cinnamon for added flavour. Combine well till the mix reaches a sauce like consistency. Keep aside.

Beat egg and butter till blended. Slowly add warm milk and blend again. In a bowl, mix both flours, baking powder, sugar and salt well. Add the egg-butter-milk mix to the flour mix to bake batter. Add milk to thin the batter if required. With a ladle, pour on a non stick pan and make round shped pancakes. Cook on both sides till golden brown.

Serve pancakes topped with cherry sauce.
