Summer of Happiness- Healthy Fruit Pizza Recipe

Happiness comes in all shapes and sizes. Specially food packaged with wholesome goodness. Recently, I bought some Mother Dairy products like natural yogurt, tadka chaach, flavored lassi and soft paneer on a summer day. I wanted to try them all, but could not resist the temptation of tasting Mishti Doi- fermented sweet yogurt first and opened it. The rich and creamy taste of the Mishti Doi was pure pleasure for my taste buds.

I love fruits and a while back, extensively traveling United States, had luscious blueberry. So the next product I tried was Blueberry yogurtlaced with real fruit bits. Blueberries are a great source of anti-oxidants and have a sweet taste with a crunchy bite and blueberry flavored yogurt is a great way to get your daily dose.




Now that got me thinking. I love trying new and healthy recipes that my family can enjoy, especially desserts. I love making desserts but worry about the calories that come with them. A beautiful idea started forming. Why not combine the goodness of yogurt with health benefits of summer fruits and make a dessert that looks pretty and tastes wonderful :-) A Fruit Pizza!!! Yes, that’s what I will make to bring some cheer on my dinner table. I decided to use whole-wheat flour, rolled oats and walnut meal to make the base. The flour provides fiber, oats have multiple health benefits and walnuts are a rich source of Omega-3 fatty acids.

So here is the recipe for Healthy Fruit Pizza:

Prep Time: 25 minutes 
Cooking Time: 10 minutes

Ingredients: For pizza base
2 cups whole-wheat flour
1/2 cup refined floor
1/3 cup rolled oats
1/3 cup walnut meal
3 tablespoons vegetable oil
1/2 cup brown sugar
1 tablespoon vanilla extract.

For pizza topping:
Mother Dairy Blueberry yogurt- 2 portions
Mother Dairy Mishti Doi- 2 portions
Thinly sliced fruits like bananas, mango, pomegranate or strawberries.

Directions to make the pizza base:
In a large bowl, mix wheat flour, refined flour, oats, walnut meal, oil, sugar and vanilla extract.
Pour cold water slowly and knead it to form dough.
Take care that the dough is not be too soft.
Cover it with a muslin cloth and let it rest for 10 minutes.
Roll out the dough in ½ inch thick rectangle shape and with a cookie cutter, cut two or three rounds as per choice
Bake till golden brown in a pizza pan or oven till approximately 8 to 10 minutes.
Remove from oven and allow to cool completely.

Making the Healthy Pizza Base

Directions to make the pizza topping:
Place the Mishti Doi and Blueberry yogurt separately in a clean muslin cloth.
Leave it hanging for 3 to 4 hours or till water drains out.
Scrape the thickened yogurt with a spoon and refrigerate.

Now assemble the yummy fruit pizza. On one of the cooled pizza base, spread the Mishti Doi topping evenly and another one, spread the Blueberry yogurt. Arrange thinly sliced fruits as per choice or better still, involve the whole family and let them built their own pizza. Enjoy :-)
