Easy Indian Style Sandwich Recipe: Grilled Rajma Sandwich

Everyone loves a sandwich! Moreover, a sandwich is one of the most versatile food that can be made with humble or exotic ingredients. Made differently across cultures, sandwich can be easily made as a on-the-go snack or sumptuous lunch/dinner. Usually, grilled till hot, they can be enjoyed cold too...remember the ice cream sandwich we all enjoy? Besides, they can be eaten practically anywhere- while working on your desk, driving (not recommended) or during work meetings. But so can be a burger, although I am partial to sandwiches.

So here is an Indian style grilled rajma sandwich recipe that can be easily made at home. Mashed Indian style rajma stuffing paired along with crunchy vegetables shall leave you asking for more.


Ingredients:

1 cup rajma/red kidney beans soaked overnight & pressure cooked till soft
1 large onion, chopped
1 tomato de seeded & chopped
1 tbsp oil
1/2 tbsp cumin seeds
1 tbsp ginger-garlic paste
1/2 tbsp coriander powder, red chili powder, garam masala powder
Salt to taste
Bread slices, preferably brown
Grated cheese
Chopped bell peppers

Method:
  • Heat oil in a kadai, add cumin seeds and saute till they change color.
  • Add chopped onions and saute till the onions turn light brown. Do reserve some chopped onions for sandwich stuffing. Now, add chopped tomatoes & fry till soft.
  • Add ginger-garlic paste and saute.
  • Now add spice powders - coriander powder, red chili powder, garam masala powder. Mix well.
  • Add cooked rajma & mix well after adding salt to taste.
  • Let the rajma cook well without adding any water.
  • Prepare bread slices by spreading butter or Greek yogurt.
  • Spread rajma evenly on the slices. Garnish with chopped bell peppers & reserved chopped onions.
  • Add grated cheese.
  • Sprinkle sandwich masala on top
  • Cover with another buttered bread slice & grill in sandwich maker or tawa.
  • Serve hot with ketchup or green chutney
