Introduction to Vietnamese Cuisine

Did you know Vietnamese cuisine is regarded as one of the healthiest cuisines in the world? A wonderfully simple cuisine that celebrates food through use of fresh ingredients (fish, vegetables, rice, and a whole host of verdant herbs and spices such as Vietnamese mint, bird eye chilies, lemongrass, basil ginger and lime ) to create flavors hard to resist and relies on minimal use of oil.

When it comes to Vietnamese cuisine it is all about Ying and Yang; the sweet and the salty, the cooling and the warming, the fresh and the fermented that brings balance and the Asian principle of the five elements of spicy, sour, biter, salty and sweet. Though relatively simple at heart, food throughout the Vietnamese landscape is an expression of these 5 elements.

Let’s find out how the philosophy of Ying and Yang and the five elements are applied to Vietnamese cooking.

Floating Markets of Bangkok

Bangkok was once known the as the Venice of Asia due to its extensive network of canals. Life then was populated in the areas adjacent to the rivers which made floating markets the hubs of the communities in the central plain of Thailand for centuries.

In present day, the floating markets are well supported locally and mainly serve as tourist hot spots. It is a great way to experience riverside shopping, taste some authentic flavors and buy some fresh and organic produce sourced from nearby farms and local orchards.

Having Fun With Jell-O Shots

A Jell-O shot is an alcoholic beverage that consists of distilled liquor mixed into a gelatin dessert and chilled. These shots are party favorites and can come in almost any flavour you can imagine and of course all the classics.

The method to make any Jell-O shot is pretty much the same and the flavors of the original drink are retained for most parts.

Singapore With Le Max2

The plane kissed the runway softly, announcing my arrival in Singapore. I stepped into the massive & glittering Changi airport and feasted my eyes on beautiful installations, restaurants serving a variety of cuisines, a movie theater, sunflower & orchid garden & spas tempting with a promise of bliss. International brand stores in the duty free section anchored fashion forward merchandise and I couldn’t resist a sneak peak into a few of my favorite stores. I connected my Le Max2 to the airport wifi marveling at its high-res 5.70-inch touchscreen display & started making a tentative plan to make the most of my Singapore visit....yes this time I had flown without a fixed itenary armed with just my brand new Le Max2 & my adventurous spirit.

8 attractions at Cameron Highlands, Malaysia

Say Shopping I smile, Say dinner out I smile, Say Spa I smile … say HOLIDAY and I almost pass out with happines … This happens couple of times during the year and this time it happened for Cameron Highlands in Malaysia.

I love Malaysia for holidays. Its beautiful and is probably one of the best for food in the world. They have diverse food options and meals offered are literally king size in portions. Shopping is great depending on which side of the country you are in and if beach holidays are an agenda one has options, just as much as if mountains are calling you have a couple of choices.

This time the mountains beckoned and the thought of being in the lap of nature was just what I needed. Sometimes it is good for the body, mind and soul to step out of the concrete jungles we live in and discover the goodness of nature and at the same time soak some of it in our otherwise mechanical systems.

So here I was in Cameron Highlands in Malaysia and I think I can say that parts of it reminded me of Switzerland … yes that’s debatable but point is that the place is so beautiful and so picturesque that  I was transported to a mini heaven.

So here are some cool things to do in case you plan your next holiday at this hill station.

Recipe: Beetroot Hummus

Hummus is a Levantine and Egyptian food dip popular throughout Middle East and North Africa. Chickpeas, the main ingredient of conventional hummus, have appreciable contents of dietary fiber, protein, B vitamins, manganese and other nutrients. Adding Beet to the classic recipe gives it amazing color, heavenly taste and enhances the nutritional value.

Doesn't this sound like an ideal way to start your Sunday brunch or dinner party.

My Staycation at The Imperial, Where Luxury is in Every Detail

A while back I came across a quote " Luxury is in every detail" and a few days later, I felt the deep underlying meaning of the quote! The feeling stayed with me throughout my stay in this luxury colonial hotel in Delhi, it refused to leave me as I walked through its majestic & tastefully done corridors, it lingered as I ate in the opulent restaurants with pleasing service or just sat around soaking in the views around me. One may wonder how far did I travel for this? Not much. I was in the bustling Janpat area of Delhi, where statuesque king palms welcomed me from the driveway to one of the most iconic hotels, rightly called "The Imperial"

Soaked in history, The Imperial has an awe inspiring heritage that has attracted prestigious guests like James Cameron, Kate Winslet, King of Morocco, Queen of Netherlands and more over the years. Designed to suit a jet setting business traveler or a luxury aficionado, The Imperial is an oasis of understated elegance.

My airport pick-up arrived in time & we zipped across busy lanes to be welcomed by a smiling Bijender at the entrance. Tall, well-built & affable, it was during my small chat with him that he told be about his stint at The Imperial that has lasted 25 years! 25 years of welcoming guests with a red turban adorning him & a smile that never leaves his face!!!

Know Your Millet

Millets, the small, unassuming grains are slowly regaining their popularity around the world. These ancient grains go as far back as 10,000 years, especially in the Asian and African continents. Millets have been an integral part of our ancestors’ food and lifestyle for ages. With the popularity of white rice, we have almost forgotten the humble yet nutrient rich millets. As diabetes, cholesterol and other ailments are on the rise among Indian population, we are once again in the search for healthy, traditional food and thus have rediscovered millets.
