Easy Green Cabbage Kimchi
If you like spicy, intensely flavored food, then kimchi is for you. Here is a easy recipe for green cabbage kimchi.
Ingredients:
1 large green cabbage
4 tablespoons coarse salt
5-6 cloves garlic
1/2-inch piece ginger
2 tablespoon miso paste
5 tablespoons chili flakes
1 tablespoon sugar
5 to 6 green onions, chopped

Ingredients:
1 large green cabbage
4 tablespoons coarse salt
5-6 cloves garlic
1/2-inch piece ginger
2 tablespoon miso paste
5 tablespoons chili flakes
1 tablespoon sugar
5 to 6 green onions, chopped
Method:
- Roughly cut cabbage into1 inch pieces. Rinse with water and place them in a large mixing bowl. Sprinkle sea salt over and toss well. Let them sit for minimum of 2 hours till the cabbage wilts.
- Rinse the cabbage once, drain & set aside.
- In a blender, combine garlic, ginger, miso paste & sugar till puree till smooth.
- In a large mixing bowl, combine the cabbage,green onions & chilli flakes. Add the paste & toss well. Add one cup water & mix well.
- Transfer the kimchi into an airtight container & let it ferment for a day at room temperature. Transfer to a refrigerator & ferment for 4 to 5 days more.
