7 Easy Makai Atta Recipes to Try Beyond Makki Ki Roti
When we think of makai atta, the first dish that usually comes to mind is the much-loved Punjabi classic, makki ki roti. Traditionally enjoyed with sarson ka saag, white butter and jaggery, this golden-yellow corn flour has much more potential in the Indian kitchen. From crispy snacks to comforting breakfasts, makai atta recipes can add variety, texture and a delicious earthy flavour to everyday meals.
If you have a packet of makai
atta sitting in your pantry, here are some easy ways to use it beyond the
traditional roti.

1. Makai Atta Cheela
Cheela is one of the easiest
Indian breakfasts to adapt with makai atta. Mix makai atta with finely
chopped onion, coriander, green chilli and grated carrot. Add cumin seeds,
salt and enough water to make a pourable batter.
Heat a tawa, lightly grease it
and spread the batter into a thin circle. Cook on both sides until golden and
crisp. Serve hot with green chutney or curd.
For a protein boost, you can add
a little besan or grated paneer to the batter.
2. Crispy Makai Atta Pakora
Give your regular pakoras a
slightly different texture by adding makai atta to the batter. Mix it with
besan, sliced onions, green chillies, coriander, ajwain and spices. Add water
gradually to form a thick batter.
Next, put coin size portions into
hot oil and fry until golden on a medium flame. Do not fry on high flame or the
pakoras will not cook from the inside. Makai atta gives the pakoras a wonderful
crunch, making them perfect for rainy-day snacking with chai.
You can also make palak, methi
or aloo pakoras using the same basic batter.
3. Makai Atta Paratha
Makai atta can also be turned
into a hearty stuffed or plain paratha. Since makai atta is naturally crumblier
than wheat flour, combine it with a little whole-wheat flour to make the dough
easier to handle.
Add grated radish, methi,
coriander or finely chopped green chillies for extra flavour. Roll gently and
cook on a hot tawa with a little ghee.
Serve with curd, pickle or a bowl
of dal for a wholesome Indian meal.
4. Makai Atta Dhokla
For an interesting twist on
traditional dhokla, combine makai atta with besan, curd and spices. Add
a suitable leavening agent and steam the batter until light and fluffy.
Finish with a tempering of
mustard seeds, sesame seeds, curry leaves and green chillies. Cut into squares
and serve with coriander-mint chutney.
This is a particularly nice way
to use makai atta when you want a steamed snack rather than something fried.
5. Makai Atta Mathri
Love crunchy tea-time snacks? Try
making homemade mathri using makai atta. Combine it with some maida or
whole-wheat flour, ajwain, salt and a little ghee. Knead into a firm dough,
roll out small discs and fry them on medium heat until crisp.
For a healthier everyday version,
you can experiment with baking or air-frying them instead of
deep-frying.
6. Makai Atta Thalipeeth
Give the Maharashtrian favourite
thalipeeth a delicious twist with makai atta. Combine makai atta with finely
chopped onion, coriander, green chilli, grated carrot and spices such as cumin
and ajwain. Add a little curd and water to make a soft dough.
Take a portion of the dough and
gently pat it into a thin round shape on a greased tawa or baking sheet. Cook
with a little oil or ghee until both sides turn golden and crisp. Serve hot
with curd, pickle or homemade white butter.
7. Makai Atta Kachori
For a crunchy evening snack, try
making kachoris with makai atta. Combine makai atta with a little whole-wheat
flour, salt, ajwain and ghee to make a firm dough. For the filling, sauté
crushed roasted chana dal or moong dal with cumin, fennel, chilli powder,
coriander powder and a pinch of hing.
Stuff small portions of the dough
with the filling, seal carefully and flatten gently. Deep-fry on medium heat
until crisp and golden. These rustic kachoris pair wonderfully with green
chutney or a tangy tamarind chutney.

Indian spices, vegetables, herbs and even traditional sweets.

"What a brilliant read! The contrast between high-speed tech in Uzbekistan and the sheer wilderness logistics of the Alaska Railroad is fascinating—and the story behind Anchorage’s humble tent-city origins is incredible. Given the unique geography and extreme winter conditions, do freight operations on the Alaska Railroad still face the same intense seasonal maintenance challenges as they did in its early days?"
