Easy Popsicle Recipes

If a delicious, drool enducing, colorful & frozen dessert is on your mind, you should reach for a popsicle. A yummy frozen treat, discovered almost a century ago, popsicles are made with a wide variety of ingredients. Eleven year old Frank Epperson accidentally discovered this treat-on-a-stick when he left a cup filled with powdered soda, water & a stirring stick on his porch overnight. Enjoyed throughout the year, popsicles are most favored summer time treat.

Popsicles are fun to make & indulged in by the entire family. Replace sugary flavored syrup with real fruits to make a healthy treat. Try making popsicles with regular milk, soy milk, fruit juices, coconut water & more. Here are some drool worthy popsicle recipes to try this summer.

All the below popsicle recipes require 15-20 minutes preparation time, 4 to 5 hours freeze time & make approximately 6-8 popsicles depending on your popsicle mold size.



Watermelon popsicle: The high water content of melons & vitamin c present in lemons are a great way to energize during summers. Peel, deseed & cube one medium sized watermelon. Put cubes in a blender along with 1 tsp lemon juice & little honey. Blend till smooth. Pour into popsicle molds & freeze till firm.

Pineapple coconut popsicle: Tangy pineapple meets soothing coconut milk in this delicious tropical recipe. Extract 1 cup coconut milk by grinding 1/2 cup grated coconut with little water & straining the paste through a cheese cloth. Blend together coconut milk & 3 cups chopped pineapple with a little honey till smooth. Add a little coconut water to get added benefits of the electrolytes present. Pour into popsicle molds & freeze till firm.

Mango lassi popsicle: Think summer. Think mangoes. High on vitamin C mangoes are a real treat. The probiotics present in yogurt help maintain gut health during harsh summers. Peel & cut 2 mangoes into small pieces. Whisk 250 gms yogurt with a little water & pinch of salt. Add mangoes, whisked yogurt, little sugar to taste & cardamom powder in a blender. Blend till smooth. Pour into popsicle molds & freeze till firm. Voila, yummy mango lassi popsicles are ready.

Lime popsicle: Lemons are natural thirst quenchers & loaded with vitamin C. In fact, we believe that when life gives you lemons...make delicious lime popsicles :D. Warm 250 ml water & dissolve 2-3 tsp of sugar or honey in the water. Take care not to boil the water. Add juice of 3-4 lemons ( vary according to size of lemons), mix well & freeze.

Strawberry popsicle: Strawberries are another summer favorite. Add 4 tsp sugar & little vanilla extract to 2 cups sliced strawberries. Mix well & let the strawberries steep in the sugar-vanilla mix for 30 minutes. Blend the strawberries with 2 cups vanilla or strawberry yogurt. Pour into popsicle molds & freeze till firm.
